Simple Kale Salad with Smoked Gouda
SERVINGS: 4 to 6 servings
INGREDIENTS:
Lemon Vinaigrette:
Half of a red onion, finely diced
¼ cup olive oil
Juice of 2 lemons
1 teaspoon garlic powder
½ teaspoon sugar
1/8 teaspoon red pepper flakes
Salt to taste (about ¼ teaspoon)
Pepper to taste
Salad:
2 bunches Lacinto kale, stems discarded and sliced into ribbons
½ cup shredded smoked gouda
INSTRUCTIONS:
Add vinaigrette ingredients to a small mason jar. Seal with lid and shake to combine. Refrigerate until ready to assemble.
Add the kale to a large serving bowl. Massage lightly, rubbing in between hands and fingers, until softened and darkened in color slightly.
Add about half of the dressing and toss to combine. Add more dressing, tossing afterwards, to achieve your desired dressing to salad ratio.
Sprinkle over the smoked gouda and toss to combine.
