SERVINGS: 12 twists
Preheat oven to 400 F. Line a sheet pan with parchment paper.
Unfold puff pastry on a floured surface. Brush with egg wash. Sprinkle with 3 tablespoons parmesan. Top with sage and black pepper.
Roll pastry into a 12-inch square. Top with enough prosciutto to cover. Use a pizza cutter to slice into twelve 1-inch strips.
Transfer strips to prepared sheet pan. Twist into spirals. (Don’t worry about the prosciutto falling off. Just place it back on where you can. It will bake up just fine).
Brush pastry with egg wash and sprinkle with remaining parmesan and more black pepper.
Bake until golden brown, 20 to 25 minutes. Let cool 10 minutes.
