Low Boil Snow Crab Legs with Quick Clarified Garlic Butter
SERVINGS: 4-8
INGREDIENTS:
2-4 lbs snow crab legs
1 tablespoon Old Bay seasoning
½ tablespoon minced garlic
1 stick of unsalted butter
Salt to taste
INSTRUCTIONS:
Add water to a large stockpot, enough to cover all of the crab legs, and bring to a boil over high heat.
Melt butter on low heat in a small saucepan. Do not stir!
When melted, skim off the foam from the top with a spoon.
Add the minced garlic and stir. Let the garlic flavor the butter for 3-5 minutes. Don’t let garlic burn.
Turn off the heat and set aside.
Once the water is boiling, stir in the Old Bay seasoning and plenty of salt.
Add in the crab legs and lower heat to a simmer. Cover and let simmer for 10-12 minutes.
Re-warm the garlic on low when there’s 5 minutes left on the crab legs. Once re-heated pour the butter into a small dish, carefully keeping the garlic in the bottom of the saucepan. Discard minced garlic.
When the crab legs are done, remove with tongs and shake off any excess water before transferring to a serving dish.
