1 8-oz can water chestnuts, drained and roughly chopped
6 cloves garlic, minced
2 green onions, diced
½ red pepper, diced
½ onion, diced
Salt and pepper to taste
Optional garish: sliced carrots, chopped green onion, sesame seeds
INSTRUCTIONS:
Combine liquids in a small bowl.
Heat a large skillet over medium heat. Add about 1 tablespoon olive oil. Add chicken and cook until browned, about 3-4 minutes. Season with a bit of salt and pepper.
Add the red pepper and onion and cook for another 5-6 minutes.
Add the garlic stir constantly for 30-60 seconds until it becomes fragrant.
Stir in the water chestnuts, green onions, and sauce and cook for 2-3 minutes or until everything is heated through.
Serve with lettuce pieces and top with optional garnishes.
