SERVINGS: 1 serving
Bring a small pot of water to boil. Add the eggs and boil for 9 minutes. Shock in an ice bath. Peel eggs and add to a bowl. Mash with a fork.
Peel eggs and add to a bowl. Mash with a fork. Stir in the mayo and season with salt and pepper. Stir in the chives (reserve a bit for garnish).
Top toast with egg salad and garnish with remaining chives.
