SERVINGS: 4 to 6 servings
Preheat the oven to 350 F. Line a sheet pan with parchment paper.
Combine the bacon and pecans in a small bowl. Set aside.
Slice the rind off the top of the cheese. Place on prepared sheet pan. Sprinkle with salt, pepper, and thyme.
Bake until bubbly and melted, about 15 minutes. Let cool 3 minutes before using a wide spatula to carefully transfer to a serving dish or platter.
Top with bacon-pecan mixture and thyme leaves. Serve with crostini or crackers.
